I'm Philip, founder of ENAK Seasonings. This one came from wanting something so badly I learned to make it myself.

The Story

When I moved to China in 2009, there was no Mexican food within thousands of miles.

At first I just went without. Then the craving got loud enough that going without stopped being an option. I learned to make tortillas from scratch. I mixed my own seasoning from whatever spices I could find in an Asian grocery store. I figured it out the way you figure anything out when you're far from home and determined enough: trial, error, and a lot of meals that were almost right before they were finally right.

There's something about being ten thousand miles from the thing you're craving that clarifies exactly what you love about it. I didn't know how much I cared about a good taco until there wasn't one available on the entire continent.

What came out of those years in Asia was a taco seasoning built entirely from scratch, with no reference point except my own memory of what it was supposed to taste like. No packet to compare it to. No shortcut ingredients to lean on. Just spices, salt, and eventually New Mexico chile powder, which I discovered gives the blend a brightness and vibrancy that the grocery store packets have never been able to match.

Here's what's in the grocery store packets that isn't in mine: maltodextrin, corn starch, silicon dioxide, and a handful of other fillers that exist to cut costs and extend shelf life, not to make your food taste better. Here's what's in mine: spices, salt, and New Mexico chile powder. That's it.
