I'm Philip, founder of ENAK Seasonings. Every blend in the ENAK Seasonings lineup has an origin story. The origin of Cajun Heat is my own origin.

The Story

I was born in New Orleans.

That sentence does a lot of work if you know what it means. Louisiana isn't just a place people are from. It's a food culture so specific, so layered, and so deeply personal that people who grew up inside it carry it with them everywhere they go. I know this because I've been everywhere, and I've never stopped carrying it.

My Aunt Terri and Uncle Rusty lived in Baton Rouge. Aunt Terri was one of the best cooks I've ever known. Uncle Rusty ran the grill like a king. Some of my earliest and most vivid food memories came from their kitchen and their backyard, and they set a standard I've been measuring everything against ever since.

A Soul Connection

I was a Saints fan my whole life. I was in the Superdome the afternoon they won their first ever playoff game. I was there again for the first game back in the Dome after Hurricane Katrina, a night that meant something far beyond football to everyone in that building and to an entire city that needed it. Louisiana gets into you that way. It's not just food and football. It's identity. It's belonging. It's a place that marks you permanently whether you stay or leave.

I left.

Or more accurately, I was taken away before I ever had a chance to know it was home.

After my first year living in China, I came home for a month. I made a day trip to New Orleans just to eat beignets and gumbo and walk around the city. Not to see family. Not for an occasion. Just to taste it again, because that first year away as I watched the Saints march to their first Super Bowl, I dreamed of being there almost every day.

The Missing Essence

My whole life though, I've been quietly disappointed by the grocery store Cajun seasonings. No city on Earth has more soul than New Orleans. The popular seasonings aren't bad. They're just missing the soul and the essence that Louisiana is known for.

Cajun Heat is my attempt to correct that. Smoked paprika, herbs, spices, and heat that registers without overwhelming. Built for the classics like gumbo, jambalaya, and red beans and rice, or just a weeknight meal that tastes like somewhere worth being.
